Ingredients

3 tablespoons - olive oil
1 large onion - minced
1 celery stalk - minced
1/3 pound - wild Chanterelle mushrooms (may use dried, but re-hydrate first in warm water for about 30 minutes and drain well before using), chopped fine
3 cups - Tillamook Smoked Black Pepper Cheese, grated
3 cups - Tillamook Monterey Jack Cheese, grated
3 cups - Gruyere cheese, grated
8 tablespoons (1 stick) - Tillamook butter
1 cup - heavy cream
3 tablespoons - dry white wine (more if needed)
¼ cup - salt for boiling pasta (or to taste)
1 pound - ziti and other small-cut pasta
Freshly ground black pepper and salt to taste
2 tablespoons - minced fresh chives

Preparation

1. In a small skillet, over medium heat, heat 2 tablespoons of the olive oil. Add the onion and celery and sauté until they are soft, about 5 minutes. Scrape the sautéed vegetables into a large serving bowl. Set aside.
2. Add the remaining tablespoon of oil to skillet and heat. Add the mushrooms and cook until they release their liquid, and are beginning to brown on edges, about 8 minutes. Set aside.
3. In a heavy-bottomed saucepan, melt the cheese and butter over low heat, stirring constantly to prevent burning. Add the cream and wine and stir. Continue to stir and cook until sauce smoothes and is slightly thickened, about 5 minutes. Add more wine if necessary to achieve a slightly heavier consistency than heavy cream.
4. Meanwhile, bring a large pot of water to boil. Add salt. Bring to boil again and add pasta. Cook until al dente, about 10-12 minutes. Drain the pasta. Pour pasta on top of onions and celery in serving bowl. Toss. Add the cheese sauce and mushrooms and mix well. Add black pepper and salt to taste.
5. Serve at once, garnished with the minced chives.
